Pecan Pie Muffins

Sorry I left you hanging yesteryday… I’m sure you spent the day refreshing your computers, calling each other frantically and asking the skies “WHY????????”… but it’s okay, I’m back.

If you are following along on Facebook you will already be aware of two very important things:

2 – I made muffins this weekend. Not just any muffins, AMAZING PECAN PIE MUFFINS!!!!

Take Two

But there’s a bit more to the story than just that. On Sunday my husband decided to take the two older kids over to his parents’ place for the day. I stayed home with Ella, aka Miss Sicky Pants, and decided that some snuggling, movies, and baking were definitely in order. So, after borrowing a few eggs from the neighbours because I NEVER have what I need on hand, we were ready to go. We whipped up these babies and from the taste I had of the batter I knew we were in for a major treat.

When they were ready, I took them out of the tins and put them up on the counter since it was nap time. Ella and I went up for a wee snooze while they cooled, and all I could think the whole time was how excited I was to scarf one of these treats down!! LOL. When she woke up, we made a beeline for the kitchen, ready to enjoy the fruits of our labour… and then we saw this:


I knew as soon as I saw him that the news wasn’t good, and I was right. The plate sat empty on the counter… all 18 muffins were gone, not a CRUMB remained. Shadow had devoured every bite and he KNEW he was in trouble. I decided to forgo the yelling and employ the “silent anger dripping with disappointment” tactic. He knew.. ohhhhhhhh yes, he knew. He sat like that in the corner for a solid 30 minutes while I cleaned up the rest of the baking supplies around him. I was so. mad.

But I wasn’t giving up! Nope.. those muffins looked so damn good that Ella and I actually headed out to the store and bought all the ingredients again. This time for a DOUBLE batch. Take THAT, dog! Once we were back home we got down to business.


So here it is… compliments of a recipe I found at The Girl Who Ate Everything, the fabulous pecan pie muffin recipe. It’s one of the easiest you’ll ever make, and most definitely one of the best.

(Yields approx 10 regular size muffins)


What you’ll need:

– 1 cup packed brown sugar
– 1/2 cup flour
– 2 cups chopped pecans
– 2 eggs, beaten
– 2/3 cup softened butter

Preheat oven to 350F, and grease your muffin tins WELL.

In a small bowl, mix the butter and eggs until blended:

In a large bowl, mix the brown sugar, pecans, and flour until blended:

Add the wet ingredients to the large bowl and mix until just blended. Then spoon the mixture into the greased tins until each cup is about 2/3 full. I use an ice cream scoop, it’s perfect.

Bake for 12-18, or until an inserted toothpick comes out clean.

Transfer muffins to cooling rack for 15 minutes and enjoy!!

As you can see above I also made a tray of mini-muffins the second time around. They are great for the kids and also make the perfect two-bite snack. They are SO yummy and while they’re definitely not something you want to indulge in too often, I think they’ll be my new go-to when I want to bring a little something to a party.

I got this exclusive item at the thrift store down the street for 99 cents. It’s just one of those little mini easels for displaying picture frames. It’s the perfect size to hold the Ipad and it keeps my screen away from the mess of ingredients when I’m burning baking up a storm.

Anyone do any baking this weekend? Up here in the great white north it was a holiday yesterday… so I know a lot of my friends were off at their cottages or camping. I wish I could have done the same, but it seems like someone is always under the weather around here! Wherever you were, I hope you had a good one.
I’m off to enjoy a muffing with my coffee. THE LAST ONE – yup, they’re all gone, but this time the humans got to enjoy them.

    Oh my gosh. I almost died when I saw that picture of your dog!! I know it must’ve not been fun at the time, but that picture is priceless! I’m glad you finally got your muffins!!! They must’ve tasted good after the journey you went through to actually eat one. :)
