Throughout the course of this blog I will not only be whining about life I will also be posting recipes! I am SO tired of searching for EASY and QUICK meals to prepare for my family of five, only to click the link and find that said chef’s version of simple includes crushing, chopping, blending, and 27 different ingredients.
No. Thank. You.
Don’t get me wrong, I don’t mind preparing a labour intensive meal now and again, but at 4:30pm on a Tuesday when my son is screaming because his sister won’t let him play on her iPod and the baby needs nursing and the dryer is dinging I need SIMPLICITY. So, in the coming days, weeks, months, you will find my collection of TRULY effortless meals to prepare that will appease spouses and children alike.
Some will be healthy – some maybe not so much – but hey, if you’re after the healthiest of lifestyles why are you reading the blog of a 35 year old mom with 3 kids and 20 pounds to lose?
Onto the meal!
TACO CHICKEN CASSEROLE
What you will need:
– 2 cups of shredded cheddar
– 2 cups of cooked, cubed or shredded chicken
– 2 cans of cream of chicken soup
– 2 tablespoons of taco seasoning
– 1.5 cups of sour cream
– 1 bag of Tostitos (can be substituted with Doritos, tortillas or anything else you think would work!)
Preheat oven to 350 degrees
Combine soup, sour cream and taco seasoning in a pan over medium heat until hot and blended. Add the chicken and mix it in:
In a baking dish, break up half of the tostitos and layer them on the bottom of the pan:
Pour half of the chicken mixture over the tostitos, cover with remaining tostitos.
Add second half of chicken mixture, cover with the cheddar:
Bake uncovered for 20 minutes at 350 degrees.
My husband and daughter added salsa to theirs, and said it made the dish complete.
